Return to civilization by calling a cab (he'll be your personal driver for about $30 an hour) and stealing away to downtown PV. You'll find unique hybrid restaurants, such as "French-xican" Café Des Artistes (for dessert, don't miss the Moctezuma chocolate fondant with gold leaf and nutmeg ice cream) and Pan-Latin Boca Bento (try the lemongrass lobster with jicama and cilantro). Both places have extensive selections of fine, aged tequilas. That'll get you primed for the late-night festivities. First stop: Citrus, the mod lounge inside the Hotel del Sol, favored by hip expats. Last stop: A rooftop bed at the newly renovated de Santos restaurant, open until 4:00 a.m. and frequented by locals and tourists alike. Since it will already be morning, you'll be right on time for your private deep-sea fishing excursion into "tuna alley."
