Puebla, Mexico
Watch out, Oaxaca: This colonial gem about two hours from Mexico City has stayed relatively low-profile compared to its southern counterpart, despite considerable assets. The laundry list includes a beautiful historic center designated as a UNESCO World Heritage site, with many restored baroque churches and a distinct culinary heritage. But Puebla never had a hotel to match the mole—until this year. The Habita group—the team behind the stylish Deseo Hotel + Lounge in Playa del Carmen and Condesa DF in Mexico City, among others—is rectifying the situation with the spring 2007 opening of La Purificadora. They've hired one of Mexico's most iconic architects, Ricardo Legorreta, to turn a 1870s water bottling plant into a 26-room boutique hotel. Legorreta created Mexico City's famously colorful Camino Real, but this time he's sticking to a strictly black-and-white palate. Enrique Olvera, of the capital's beloved Pujol restaurant, designed the menu, but since Puebla is the country's gastronomical heart—and birthplace of mole poblano—getting a good meal here is already a given. Aeroméxico just launched three weekly nonstops from New York, making a pilgrimage that much easier.
