Buenos Aires has been in the spotlight for a couple of years, but the rest of Argentina is starting to attract sophisticated travelers too. The wine district surrounding Mendoza is becoming the South American Napa Valley, and in the farther-flung Lake District, long romantic vistas and acres of mountain and forest are the backdrop for rafting, horseback riding, biking, and sailing. Our favorite new trend in the countryside is the emergence of estancia properties—former ranches and horse farms—that mix rugged cowboy charm with worldly style. Gauchos take you riding along the pampas to round up cattle during the day; come nightfall, your hosts will pair some of the best steak you've ever tasted with up-and-coming local vintages. The new Hotelito de Colores is a good place to start: A former family ranch less than an hour from the capital, it received a chic overhaul last year—the owner has a boutique in B.A., hence the smart fusion of antiques with vibrant colors and textiles. In the Lake District, snag a log cabin at Peuma Hue, a lakeside estancia (pictured) run by a former psychologist—it's a bit New Agey, but undeniably gorgeous. Emmanuel Burgio's Blue Parallel specializes in trips to Latin America, and he'll create an authentic gaucho getaway—whatever kind of therapy you need.
