Consider it one of the positive effects of globalism—as American palates have expanded, so has interest in culinary travel. Globally, cooking schools are springing up faster than shiitakes after a storm. And even if you can't tell your mezzaluna from your microplane, you'll find that culinary learning vacations are a great way to marinate yourself in local culture, make new friends, and impress old ones. ("Why, Alice, you simply must tell me where you got this recipe for khao niew mamuang!"). From France to Thailand, here are some great places to slice, dice, wine, and dine. And no worries: Even if your fellow students are excessively proud of their knife skills, you'll be just fine, even if your highest culinary achievement to date ended in "helper."
