MASSACHUSETTS: Rhode Island–Style Calamari

We're not exactly sure why Jasper White's fried calamari is called Rhode Island–style, but we can tell you with certainty that it's like no other calamari we've ever had. The menu actually warns that the calamari is "spicy & greasy." To our taste, the "greasy" aspect is sheer luxury, the tender circles of squid encased in a crust that will make your fingers glisten and your taste buds smile. The spicy part has to do with the vividly hot pepper relish that is interwoven with the calamari and includes little circles of hot-hot pepper. It all takes place in this energetic dinner hall near the Charles River in Cambridge, run by Jasper himself—whom we consider one of America's top regional chefs.
