RHODE ISLAND: Snail Salad
From April to October, the outdoor picnic tables at Iggy's are crowded with visitors who walk from Narragansett's spectacularly sunny beaches for chowder, fried clams, doughboys (sugar-dusted fried dough), and that only-in–Rhode Island specialty, snail salad. Found on nearly every seafood menu in the Ocean State, the salad is a supergarlicky, well-oiled array of thin-sliced snail that has a pleasant chew not unlike calamari. It comes laced with sliced black olives atop a bed of lettuce and tomato, with a lemon wedge to add extra sparkle. It's refreshing and full-flavored—a perfect foil to summertime's fried seafood.
