FLORIDA: Shrimp & Grits

At Louie's Backyard on Key West, the grits are creamy and rich with a fine-grain texture and flavor that is all about earth and sunshine and summer's most delicious corn. Combine it with sweet jumbo Gulf shrimp, butter-fried with mushrooms and diced slab bacon, and you have a meal that is unspeakably opulent. And it's all the better for its location on Louie's terraced patio at the edge of the cobalt-blue Atlantic on a warm summer night. Although the dish isn't always on the ever-changing menu, you can count on Chef Doug Shook to make the most of locally caught stone crabs, spiny lobster, yellowtail snapper, wahoo, and cobia.
