OREGON: Alder-Wood Smoked Salmon
"Bring your salmon on in," says Jerry Eichentopf, whose grandfather Otto started Otto's Sausage Kitchen in Portland in 1929. "We'll get it back to you in two days." What happens in those two days is smokehouse magic. The salmon basks in the perfume of burning alder wood, absorbing its sweet piquancy and attaining a consistency that is firm and yet supremely tender. Even if you don't have your own fresh-caught salmon to bring, Otto's is sure to have some of the local catch already smoked to perfection. While the salmon is officially takeout, Otto's mainstay is actually its specialty sausage sandwich, which can be eaten at inside and outside picnic tables. They're delicious, too, but that's a whole 'nother food story.
