MAINE: Lobster roll
Eating lobster is a lot of work, with all that shell-cracking, meat-picking, and butter-dipping. The hungry man's solution? The lobster roll, a delicacy with an inherent argument to amuse connoisseurs: hot or cold? The cold lobster roll is the time-honored Yankee way of doing it: The meat is mixed with mayonnaise and layered in a buttered and grilled split-top bun. We must say, though, the hot version is sheer luxury, with nothing but warm buttered meat in a bun. The Maine Diner in Wells, a village of sandy beaches seven miles south of Kennebunkport, offers it either way. The hot version is served with a cup of butter alongside the bunned meat, allowing eaters to drizzle it as they go.
