CONNECTICUT: Potato Pancakes

Hartford, America's Insurance Capital, is famously boring. But when it comes to pancakes, it's a thrill. Mo's Midtown makes great ones of all kinds: apple-walnut, blueberry, chocolate chip, and double berry, as well as broad whole-wheat buttermilk cakes that are so light that they virtually levitate off their plate. Best of all are potato pancakes that arrive four to an order, their spuddy, cream-rich interior encased in a wickedly crisp red-gold crust. Requisite condiments are sour cream and apple sauce. The best place to dine is at the counter, with a view of the short order cooks busily working the grill, and where the aroma of hot hash browns, sizzling bacon, and morning coffee help to turn the nastiest winter day into a harmless ghost outside the diner door.
