OKLAHOMA: Chicken and Dressing
When Sweet Tater Clanton opened Clanton's restaurant on Route 66 in 1927, most of the road was not yet paved, and it's said that to attract customers he used to walk out the front door and bang a pot and pan together when he spied someone about to drive past. Today his great-granddaughter Melissa and her husband, Dennis Patrick, still welcome travelers to their outpost along the old Mother Road, serving superb chicken-fried steak as well as the tastiest chicken dinner we know. Large hunks of moist white and dark meat are piled onto a heap of bread dressing (a.k.a. stuffing) packed with the flavor of sage. The dish is coated, of course, with the kind of heavenly gravy every grandma wishes she could make.
