WISCONSIN: Butter Burger

Wisconsin revels in its Dairy State status, and local cooks take every opportunity to showcase cheese, custard, cream, and butter. The butter burger at Solly's Grille is a magnificent—if artery-clogging—example. It is a modest sirloin patty, cooked through, served on a bun that is quite literally soaked with melted butter. Not margarine, not flavored oil: pure, dairy-rich butter. Words cannot describe the wanton opulence of hoisting this burger from plate to mouth and feeling commingled butter and beef juices running hot rivers down your chin, fingers, and wrist. North of downtown at the edge of Lincoln Park, Solly's is a fun place, where seating is at a pair of horseshoe counters and the beverage of choice, even in below-zero Great Lakes weather, is a fresh banana malt.
