SOUTH CAROLINA: Broiled Flounder

Until you've eaten broiled flounder in Charleston, you haven't eaten broiled flounder. In the always-crowded dining rooms of Hyman's Seafood—located in what for more than a century had been the family's thriving department store—you get a whole fish that weighs over a pound and is broader than a dinner plate. Caught in the salty waters of the Atlantic, it's at its best in the summer months. The flounder's flesh is scored in a diamond pattern and then broiled, where it firms up into bite-size pieces of luxurious meat arrayed neatly atop the skeleton. Each juicy nugget you lift—using the gentlest upward pressure of a fork slid underneath—has a delicate ocean sweetness magnificently complemented by Hyman's homemade apricot chutney.
