WISCONSIN: Friday Fish Fry

Friday night fish fries are a year-around tradition in Milwaukee, and there is none better than that served forth by a personality-plus corner tavern called McBob's Pub & Grill. This is a TGIF sort of place every day of the week. Customers come for good times at the bar and the classic Badger State fish fry, hand-breaded and pan-fried in one of three configurations: a single serving of perch, walleye, or grouper; a combo of perch and walleye; or a super combo of all three. The walleye is light and ephemeral; the grouper is mild with a sweet oily flavor; the perch is snowy white. Fanned out under the fish are sensational potato pancakes laced with onion and packing full spuddy flavor. Libation of choice: shot and a beer.
