Iron Chef victor and James Beard Award–winner Ken Oringer goes to work each day at the Eliot, a very by-the-book hotel housed in a neo-Georgian mansion in Boston's demure Back Bay neighborhood. Yet the chef doesn't let that little detail of the hotel's pedigree stand in the way of pairing foie gras with dehydrated yogurt on Clio Restaurant's decidedly modern French–Asian menu. Oringer's fanciful dishes, such as hot-and-sour Nantucket bay scallops with candied grapefruit and a cassolette of sea urchin and lobster, are served on white tablecloths. And the dining room has the same muted beige-on-taupe palette that you'll find in the 95 guest rooms. But no matter—a touch of whimsy in the kitchen goes a long way.
