The 11-room Hotel Lanai is what you'd expect Gilligan's Island to look like if Thurston Howell III had been rescued, only to return to the island and develop it as a club. But the castaways could never have imagined food like this. Not surprisingly, for a co-founder of the Hawaii Regional Cuisine movement, chef Beverly Gannon emphasizes local ingredients and techniques at the Grille. The catch of the day comes with a pecan crust; local shellfish is stewed with a lobster lemongrass broth; and the top choice of regulars is the locavore rotisserie chicken with truffled macaroni and cheese. The food isn't the only thing here with roots firmly in Hawaii: The hotel originated as lodging for vacationing Dole executives in 1923.
