Diners at El Landó are invariably greeted with pan con tomate (bread rubbed with tomato), perfect slices of Ibérico ham, and more slices of tomato in garlic and oil. After that, it’s wise to put yourself in the hands of Angel, who will send out endless plates of tiny cockles kissed with garlic, still-sizzling “fried” asparagus, crispy baby lamb chops.
