The last hurrah: Head to the fine state of Oregon—home to some of the country's best booze producers—and pick your poison. If you're into debating the finer points of hop varietals and the wisdom of the German Beer Purity Law of 1516, make your base at McMenamins Kennedy School. This quirky hotel in a former school on the outskirts of Portland houses a brewery and 35 guest rooms within stumbling distance of its six bars. Kegs are available for purchase, but don't let one pint too many of the Old Schoolhouse Pale Ale cloud your memory: You're sobering up as soon as you check out…right? If it's wine you're into, the Allison Inn & Spa, in the Willamette Valley (a.k.a. the New Napa), is surrounded by more than 200 vineyards and offers complimentary on-site tastings and Champagne oil massages. For those who go straight for the hard stuff, the Jupiter Hotel's Distillery Package includes a booze crawl to Portland's small-batch stills, which turn out everything from absinthe to aquavit. Just remember to invite your favorite designated driver.
