It's not called "the cathedral of salsa" for nothing. Dancers with Latin rhythm in their souls perform Acapulco-style cumbia in this enormous dance hall. The spins and dips get more dramatic as the night progresses, with dancers pausing only for a few mojitos. You can pick out the pros, who adapt their moves to suit salsa, merengue, and mambo beats—but the dance floor is usually so crowded that you can dance along even if you haven't a clue what you're supposed to do.—Maribeth Mellin
