Chef Ezra Kedem's Arcadia is easily the top table in Jerusalem. Kedem transformed an atmospheric old building into a slice of Provence in the Holy City—complete with authentic stone arches and floors—but relies on local ingredients, often sourced less than 30 miles away, when preparing his dishes.
