This restored fin-de-siècle hôtel particulier set a new standard for boutique luxury when it opened in 2002 in Old Montréal. The owners traveled around the world to handpick antiques, furniture, and paintings to individually furnish the 60 rooms; the result is an eclectic mix of Russian armoires, Thai silk wall hangings, wood floors imported from Italian castles, and imposing Grecian sculptures. Ask to stay in one of the high-ceilinged, wood-paneled Heritage Collection Suites for a glimpse of Old Montréal when it was still young. Or for something a bit more contemporary, book the 1,800-square-foot Royal Suite or 2,200-square-foot Presidential Suite—both connect to a second (optional) bedroom and have a (gas) fireplace and a marble bathroom with a soaking tub and a rain shower. The latter suite has a separate dining room that seats ten, as well as a separate kitchen and a grand piano. At $5,000 per night, the Terrace Apartment Suite is the priciest night's stay in Canada: It ups the amenities of the Presidential Suite with almost double the space, a screening room, a terrace with panoramic city views, and private access. Need a reservation at a booked-solid Au Pied de Cochon or Joe Beef? No problem, just ask the concierge. And the spa menu is a compilation of caviar masks, seaweed body wraps, and Pevonia treatments. No wonder Madonna stays here when she's in town, and the Rolling Stones rented the whole place on their 2005 tour.

The "glamorous but not pretentious, extremely peaceful and private" property in a former bank has a collection of Russian armoires, Venetian dressers, and an Indian palanquin. Accommodations marry red upholstery, large wooden headboards, and goose down duvets, and exude a "very masculine aura." Restaurant Le XO has a six-course tasting menu for vegetarians.
