The disputed inspiration for Jimmy Buffett's "Hamburger in Paradise," Le Select is a local legend in the heart of Gustavia, going strong for more than half a century. The kind of place for a casual beer, cocktail, and, yes, burger, with a roadhouse feel and shaded outdoor seating; perfect for people-watching.

Brace yourself for a rowdy night: This bordello-styled nightspot embodies every drop of the fabulous decadence raging on the island. Reserve a table for dinner as far as possible in advance (especially for weekends)—by midnight there'll be dancing on the tabletops. There are also "fashion shows," the procession of girls modeling ever more skimpy outfits from Le Ti's on-site boutique of swimwear and fluffy lingerie. Simone de Beauvoir is turning in her grave.

St. Barths' own little corner of Ibiza, the Yacht Club is not nearly as fastidious as the name implies. Less blazers and martinis, more thumping house music and intemperate dancing, usually with a crew of leggy damsels. Free entry is a plus, though the door policy tightens during high season, so reservations are essential.
