In a city that's all about more, Red Rock is in many ways all about less: less flash, less neon, less silicone. This 816-room property, located ten miles west of the Strip, is tastefully subdued, taking aesthetic cues from its canyon desert surroundings with color schemes of sepia, red, and rust. There is, to be sure, some glitz—3.1 million pieces of crystal, for example, in the casino's stunning chandeliers—but this is a place for those who have been there, done that. And the Fertitta hotelier family (of Green Valley Ranch Resort fame) have made this a self-contained oasis: Rooms, in hues of brown and white, have sweeping canyon or Strip vistas, 42-inch plasma TVs, down duvets, and palatial bathrooms. The massive "backyard" pool area has private cabanas and huge daybeds, while the spa couldn't feel less like Vegas, with its eucalyptus-scented air and Zen atmosphere. None of the nine restaurants has celebrity chef status, but Salt Lick BBQ, imported from Austin, has ribs, pulled pork, and brisket
