As far as Sin City dining has come, Mario Batali and Joe Bastianich's new restaurant in the Venetian tests the boundaries of its haute cuisine. Unlike notable chefs who have held back at their Strip outposts, Batali delivers a menu that mingles his signature exotics—lamb's brain, four variations of rabbit—with more prosaic and obligatory Vegas fare like grilled rib eye. The silken Parmigiano-Reggiano stormato is divine, with thin slices of royal trumpet mushrooms dripped with balsamic vinegar, and the sharply spicy spaghettini is dotted with generous bits of lobster. The multi-room space lets you choose between a secluded wine closet filled with tempting $875 bottles of 2001 Sor“ Tildin and boisterous hardwood-walled dining rooms. No detail is overlooked, right down to a "bread course," with a slab of grilled bread soaked in salty olive oil (entrées, $29–$50).
