Chef-owner Carlos García Schätzle has startled critics by offering haute cuisine in Santiago's quiet barrio of Providencia, previously known for low-cost, low-quality eateries. The Bolivian native is unrepentant: After training in New York, he came back to his adopted Chile to spread the gospel of cutting-edge food, launching the magazine D-gustar and unveiling this 42-seat restaurant in a spacious residence filled with terraces and cozy corners. Chilean classics are given a modern twist, from the house cocktaila pisco sour twinned with sour apple and mintto starters such as the plantain-encrusted prawns and the salmon seviche with mango. There are staples such as salmon steak and tuna tartare, as well as more offbeat but delicious dishes like snookfish marinated in mojito and Moroccan-influenced pork with mint and figs (entrées, $11$12).
