At his previous restaurant, the Euro-Latino Bon Lloc, Mathias Dahlgren looked outward for inspiration. Now, at his triumphant self-titled venture in the Grand Hôtel, the chef comes home. Meals begin with a marble-sized ball of bread that was a staple of his childhood, and humble regional dishes are rendered sublime: Pig's cheek is paired with sausage, Jerusalem artichokes, and black trumpet mushrooms, while pickled herring is topped with caviar, egg yolk, and brown butter. Reindeer and game make frequent, delicious appearances. British designer Ilse Crawford has created a dual space: The casual Matbaren bar has a colorful tiled floor and plain wood tables, while the elegant Matsalen dining room is done in a classic Scandinavian palette of butter yellow and gray. On either side, you'll find remarkable food, faultless service, and spectacular views of the Royal Palace (entrées, $50–$74).
