On Old San Juan's reenergized restaurant row, Taste Global Cuisine is an ambitious collaboration between two young chefs, owner Guillermo Gonzalez and Vincent D'Amato. In a room highlighted by indoor waterfalls, a green granite bar, and plush upholstered chairs, the chefs work in a stagelike floodlit open kitchen. D'Amato often comes out to chat with patrons and is happy to create special dishes for repeat customers. While the menu changes every three weeks and spans the globe from tequila seviche to lapin au vin, look for New England–inspired duck with waffles under a maple glaze (like breakfast and dinner at once) and an appetizer of jerk tuna, with two pieces, seasoned differently by each chef, separated by a coconut gelée palate cleanser (entrées, $32–$44).
