In the expansive Penha Longa Hotel, in the village of Linhó, Arola is the first Portuguese venture by Catalan chef Sergi Arola. In keeping with the chef's urban-cool style, there are metallic silver columns, pendant lights, chain mail curtains, and a DJ spinning light electronica. More than 500 wines, mostly Portuguese, are housed in a dramatic transparent case in the middle of the dining room—even so, all eyes are turned to the glass wall overlooking the golf course. From the kitchen come modernized Spanish dishes like scallop carpaccio drizzled with passion fruit vinaigrette and a poached quail egg sandwiched between linguisa sausage and delicate cauliflower foam.
