Aspens have never grown on Denver's South Broadway stretch—until last summer, when a forest of the snow-colored trees sprouted up within Beatrice & Woodsley. The spindly trunks, along with small pine tables and a bar backed by felled logs and chain saws, allude to the fairytale of the restaurant's eponymous lovers, a winemaker and a lumberjack who settled in the woods of Colorado. The aesthetic could scream kitsch, but its execution is ethereal and refined, much like small plates such as succulent rabbit with herbed pistou and onion marmalade-topped diver scallops. Finish with the chocolate "bubble" filled with white mousse and caramel.
Tip: The best seats in the house are the booths at the back, draped in gauze for extra privacy (plates, $8–$18).
