Named after Colombian artist Fernando Botero, the steak house at Encore resort feels like a tarted-up colonial-era British escape: The circular space centers on Botero's massively rotund Fertility Goddess and incorporates dark woods, palm fronds, tufted white columns, and tiled floors inlaid with floral mosaics. You won't find Mark LoRusso chatting up the clientele; the shy former Tableau chef prefers the kitchen to the dining room—and we think that's a good thing. You can't go wrong with dry-aged rib-eye with chimichurri sauce or the raw shellfish tower, but try less traditional offerings like artichoke-and-fennel-stuffed loup de mer or garlic-roasted bone marrow.
Tip: Save room for playful desserts—we love the PB&J doughnuts (entrées, $31–$75).
