Singapore's hippest restaurant group branches out with this wine-centric spot in Hong Kong's up-and-coming Wanchai district. The three-level space has a snug bar decorated with richly hued velvet sofas and antique European chandeliers, a main dining area, a handful of private rooms, and a swanky rooftop lounge. Chef Thomas Mayr's confident cooking ranges from a delightfully light mushroom "cappuccino" with shaved truffles to milk-fed lamb with eggplant caviar, roasted onions, and cherry tomato confit. The top-notch wine cellar has over 2,000 varietals.
