It's all about the dough at Co., the long-awaited pizza spot from Sullivan Street Bakery founder Jim Lahey. At his compact Chelsea restaurant, with simple blond-wood tables, the bread master takes flour and water to unimaginable levels, beginning with crusty, springy loaves perfect for dipping in fresh ricotta. His thin-crust, irregularly shaped pies range from the minimalist pizza Bianca to the rich flambé, smothered in Parmesan, buffalo mozzarella, caramelized onions, and lardons.
Tip: Seasonal salads like butter lettuce with butternut squash and pumpkin seeds round out the carbs (pizzas, $7$17).
