At his compact Chelsea restaurant, with simple blond-wood tables, the bread master takes flour and water to unimaginable levels, beginning with crusty, springy loaves perfect for dipping in fresh ricotta. His thin-crust, irregularly shaped pies range from the minimalist pizza Bianca to the rich flambé, smothered in Parmesan, buffalo mozzarella, caramelized onions, and lardons.
