Soon after meeting his Peruvian wife, Úrsula, in the kitchen, chef Hervé Galidie left his Michelin-starred Le Jardin in Paris and relocated to Lima. After three years of teaching at the Peruvian branch of Le Cordon Bleu, Galidie has opened Hervé, in the fashionable Miraflores district. Here, he subtly incorporates indigenous flavors into French dishes: Peruvian black potatoes are layered in a terrine, pâté is served with green mango, and a bitter chocolate tart is accented by camu camu, a native Amazonian fruit.
Tip: Try the duck magret with turnip confit, figs, and olives (entrées, $22$34).
