Celeb chef Jean-Georges opened seven restaurants in 2008 and has shown no sign of slowing down. His first Mexican venture, Market, at the hyperluxe One&Only, has punchy bold cooking that is firmly rooted in Mexico. Chef de cuisine Alex Theil combines Vongerichten's signature Asian-inspired style with native ingredients in dishes such as crab-stuffed squash blossoms and steamed grouper in a delicately spiced coconut and poblano pepper broth. Forego the obligatory tequila in favor of something from one of the country's best wine lists.
Tip: Vongerichten's adjacent Suviche bar has sushi and seviche, plus stellar views (entrées, $36$58).
