The seafood-centric restaurant at the brand-new Atlantis resort, Ossiano draws Dubai's elite with dishes created by Catalan celebrity chef Santi Santamaria and a flamboyant dining room dominated by a vast aquarium housing 65,000 creatures. Santamaria's frequently changing menu is executed with pitch-perfect consistency by a tag team of rigorously schooled disciples from his Barcelona restaurant empire. Expect a flurry of tasty amuse-bouches between courses such as the wild Tasmanian salmon with baby fennel and caper flowers or the elegant mille-feuille of daikon layered with dates and drizzled with honey vinaigrette.
Tip: The one negative is the astronomically priced wine list, which starts at $27 for a glass of Spanish tempranillo (entrées, $57–$93).
