With a beautiful setting overlooking Tivoli Gardens, Restaurant Herman, inside the stylish Nimb hotel, has become one of the edgiest tables in Copenhagen. Young chef Thomas Herman surveys the white duplex dining room through a window that also allows diners to watch him and his team preparing such superb modern Danish dishes as chestnut bisque with salt-pickled scallops, tiny wild mushrooms, and a dollop of caviar as well as smoked duck with brined walnuts and red cabbage.
