A 40-minute train ride from Madrid, Aranjuez has long been the capital's garden, supplying it with strawberries and asparagus. Now, chef Rodrigo de la Calle takes that one step further, turning his new restaurant into a showcase for exotic produce grown in collaboration with "gastro-botanist" Santiago Orts. The room isn't much to look at, but that's hardly the point. From the citrus "caviar" (the innards of an Australian finger lime) piled atop briny oysters to the mind-blowingly sweet dates paired with gamey squab breast, eating here is such a delightful adventure that you feel a bit like Alice in Wonderland.
