Sergi Arola's latest restaurant has Madrileños lining up. With its formal decor and hushed tables, Gastro isn't quite the place you'd expect of a rocker like Arola, but the serene interior serves to better emphasize the action on the plate. Seasonal prix fixe menus include a mix of the chef's greatest hits (his patatas bravas come as tiny, luscious cones fried in goose fat and topped with a garlicky daub of aioli) and more recent inventions like an impossibly rich clam chowder cut with salty-sweet jamón Ibérico.
Tip: Book the chef's table, separated from the kitchen by the glass wall on which Arola scribbles the night's menu (tasting menus, $107$163).
