At the new Encantado Resort, chef Charles Dale faces stiff competition: New Mexico's stunning mountain scenery out the window and famous Roberts (Redford and Duvall have both visited) in the subdued dining room. But Dale's confident food, which trots all over the globe, remains the center of attention. Southwestern ingredients are employed judiciously: chipotle adds a smoky kick to hoisin sauce in Chinese pork buns, and Anasazi beans lend earthiness to a cassoulet made with locally raised lamb. If the assured waitstaff—easily the best in the area—have a wine recommendation, take it.
Tip: Go on Saturday at sunset and eavesdrop on discussions of the previous night's gallery openings (entrées, $34–$42).
