The Pavilion is one of the most elegant restaurants in Antigua, despite its location right next to the airport. The exterior is an impeccable representation of a 19th-century colonial estate, while the interior looks more like that of a French château, with Bernardaud china and Christofle flatware beneath chandeliers hanging from marquetry ceilings. Chef Andrew Knoll hails from Emeril's in New Orleans, where he prepared hundreds of meals an evening; here he cooks for a dozen or so. And the dishes like foie gras "Belgian waffles" and sweet-and-sour Kurobuta pork chops with smoked Muscat grapes bear out his attention to detail. There is one snag: The location near the airport is a bit of a trek for guests staying in the posh south coast resorts. Jackets required for men. Book ahead.
Open Tuesdays through Saturdays 7 to 10 pm.
