Cooking with seasonal, local and organic ingredients is one thing, but chef Ryan Hardy at Montagna takes the idea to new level: He owns his own farm. Pigs, cows, goats, chickens, vegetables… the works. And he doesn't stop there: He handcrafts all the restaurant's cheeses, and handcures all the sausages and meats. The result is food with robust, natural flavors, including a milk-fed veal chop with mountain chanterelles, farm radishes and 15-year-old balsamico; and a roasted pork tenderloin with braised bacon, collards, apple butter and spiced carrots. The wine cellar has more than 20,000 handpicked bottles, too. The staff knows their stuff, so let them steer you right.
