Baja California restaurants

Part Mexican and part Californian with a heavy dose of Pacific Rim flavors, Baja's cuisine is always evolving, especially in Los Cabos. Modest tacos al pastor, fish grilled mojo de ajo style, and lobster with rice and beans still satisfy cravings for down-home local meals. But international chefs have also been competing to define a Baja style incorporating fresh veggies and herbs from nearby organic farms, chilies from Mexico and Asia, tropical fruits, and always the freshest catch of the day. Thanks to the predominantly American clientele, restaurants of all types open around 5 pm for dinner and tend to shut down by 11 pm. Taco stands provide fuel for the after-hours crowd.
