With one of the most dynamic dining scenes in all of Central and Eastern Europe, Budapest has long since shaken off its reputation for paprika, goulash, and roast goose. Of course you can get that too—Hungarian fare is tasty, and filling—but it would be a shame to overlook the creative culinary fusions currently taking place, including sushi-style foie gras, and beef tartare wrapped in crispy noodles with yogurt-wasabi dressing, whipped up by a new generation of globe-hopping restaurateurs. Wines, especially dessert varieties, can compete with the world's best, and overall quality has been greatly improved by the investments of major Spanish and French concerns in regions such as Tokaj, Lake Balaton, and Eger.
