There's been a grand château-style hotel on this spot since 1888, when the Canadian Pacific Railway opened the first Hotel Vancouver. The hotel's current incarnation, with its peaked copper roof, opened in 1939 for the royal visit of King George VI and Queen Elizabeth and is one of the city's most striking landmarks. The 556 rooms and suites are decorated with old-school elegance: lots of cherry wood, heavy drapes, and floral upholstery. The best are the 39 Fairmont Gold rooms on the ninth floor, which are extra-spacious (averaging 750 square feet) and also give guests access to a private check-in desk, concierge, and posh lounge with an honor bar, deluxe continental breakfast, and evening hors d'oeuvres. There's a health club with a 50-foot lap pool beneath skylights, and on the lower level is the Absolute Spa, Canada's first men's concept spa. In contrast to the rest of the property, the spa is startlingly modern, with free Wi-Fi, pedicure chairs with built-in flat-screen TVs, and treatments like 60-minute back "facials."—Kasey Wilson
