There isn't a more refined or romantic "fishing camp than this exclusive 12-room outpost with an edge-of-the-world feel. Established as a private fishing lodge in 1958, Southern Cross has since become a full-fledged resort that lures serious divers and anglers to one of the Caribbean's most pristine underwater ecosystems. The vibe is barefoot casual, with a friendly staff, a mix of buffet and plated meals (including Friday dinners on the dock under a blaze of stars), drinks on the honor system, grab 'em and go kayaks and bicycles, a swimming pool and hot tub, and 300 yards of hammock-worthy powdery white sand fringing South Hole Sound. Aim for the five newest rooms on the east side of the property—a pair of pastel-colored two-story, two-unit bungalows and a stand-alone, family-friendly two-bedroom suite, Blossom Cottage. The rooms exude a rustic-cool attitude, with split-bamboo headboards and window treatments, custom sinks and mirrors, a seating area that doubles as a daybed, outdoor showers, and shaded decks made for hanging out. The remaining units, which date to 1971 and are in a wing closer to the main building and pool, have a more traditional feel—and far more wicker furniture. Two dedicated dive boats and resort fishing guides guarantee that scuba sessions aren't crowded and that the bonefish and tarpon will be biting. Wi-Fi access is available in the main building, but in keeping with the castaway ethos, rooms remain TV- and telephone-free. Five-night minimum stay required.—Christopher Cox
