Modern Dresden has reinvented itself in a remarkably short time into a culinary destination of note. High-end Dresden restaurants generally take seriously the notion of terroir, that food should be locally sourced and inspired by regional tradition. French and Italian influences are common, as are modern cooking techniques such as foamed sauces and daring flavor combinations, but menus abound in local fish, game, and vegetables. There is always the option of simpler restaurants with traditional roasts and dumplings, but for that you'll have to spend a little less money. Service at the fancier places tends to be extremely courteous and warm, whereas it can be brusque at more populist eateries, a reversal of the usual pattern.
