The sudden explosion of new restaurants in Dubaithere are now more than 400has, paradoxically, led to a drop in service standards due to a shortage of well-trained staff. Don't be surprised if your very reasonable request flummoxes your waiter. Alcohol is criminally expensive and is only served in restaurants attached to licensed hotels or clubs; the fact that almost every food item must be imported to this desert state adds to the bill. For all the celebrity chefs establishing Dubai outposts, the food is ironically much tastier and more authentic outside the hotels in nonlicensed ethnic restaurants, which tend to be less glitzy and a whole lot cheaper. People eat late in Dubai, with few diners sitting down before 9 pm. Days off are Friday and Saturday, so booking in advance is essential on Thursday and Friday nights. One final word of warning: When a menu says "spicy" here, they really mean it.
