This tiny, high-end novelty is tucked behind a courtyard near the Arno River. The chef, Andrea Mazzoni, prepares edgy cookingthink foams, risky flavor combinations (coffee with meat, that sort of thing), and innovative presentations. But alongside wacky excursions like risotto cooked in whey with blueberries and vegetable coal, there are always a few reassuringly normal dishes on offer (risotto alla milanese, grilled fish of the day). The elegant, vaulted dining rooms and well-spaced tables give the place pleasant acoustics, and the service is professional, though the piped easy-listening soundtrack borders on cheesy. The wine list is extensive and well-chosen.
