Though you can still load up on sausage, schnitzel, and potatoes, Germany is no longer exclusively the province of cheap, heavy eats. In cosmopolitan Hamburg, a generation of internationally trained chefs has introduced a lighter, more refined style of eating—beyond just the now-ubiquitous Asian influence. The best chefs pay homage to the past by doing "international" takes on regional dishes, especially fish, game, and root vegetables. On the cheaper (and heavier) side of the scale is abundant herring, as well as a vinegary potato salad that's a revelation after a lifetime of the mayonnaise-laden American version.
