With its fashionable boho interior, creative seasonal menus and excellent wine list, it's no surprise that M has stayed popular—even trendy—among Hong Kong's notoriously fickle diners scene since 1989. The cuisine seems to be an odd sort of fusion, but really it's just based on European dishes leavened with North African/Middle Eastern and Scandinavian influences. A few perennials: Beluga caviar and crème fraîche on a warm crepe; a slow-baked, salt-encrusted leg of lamb with eggplant, green beans, roasted pumpkin and parsley potatoes; and the fruit Pavlova for dessert.
